I found this recipe on Pinterest (like I do with everything!) the other week and we loved it! I just made it again tonight and wanted to share it with you all. Did I mention it is a crockpot recipe? Another reason to love it!
What you will need:
- 1.5 lbs of chicken
- 3/4 cup hot sauce
- 2 tablespoons coconut oil
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 4 sweet potatoes
- 1 tablespoon corn starch
Put the chicken into a greased crockpot. Mix the hot sauce, coconut oil, salt, and cayenne pepper into a microwave safe bowl and microwave it all until the coconut oil is melted. Pour it over the chicken. Cook on high for 1.5-2.5 hours or low for 3-4 hours.
Bake the potatoes for an hour at 400 degrees. In the last half hour shred the chicken then add a 1 tablespoon cornstarch & 1 tablespoon water mixture to the chicken. Mix well and put the chicken on high for half an hour.
When the potatoes are done…sweet potatoes take forever!! Cut the potatoes in half, scoop out some of the potato (I put that in a bowl & give it to Liam! ha! or put chicken on it if there is extra) and put the chicken in. Garnish with chives. I also put a little greek yogurt ranch dressing on top to cool it off for me. It is tasty enough without it though if you can handle it! The recipe I found on Pinterest had a greek yogurt blue cheese dressing.
