Healthy Blueberry Muffins

I am excited about sharing these muffins with you! I just made them today & am very happy with how they turned out.  They are nice & fluffy, with great flavor!



I used frozen blueberries

Here is the recipe that I followed:

  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 1/2 cup + 3 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup  greek yogurt
  • 1/2 cup  milk
  • 1 teaspoon vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup honey
  • 1/2 cup olive OR coconut oil
  • 1 cup blueberries

Preheat the oven to 400 degrees & prepare muffin tins with paper.

Combine the flour, brown sugar, baking powder, baking, soda, salt & cinnamon in a large bowl. In a separate bowl mix the remaining wet ingredients together except for the blueberries. Slowly mix the wet ingredients into the flour mixture. Once it is well mixed, fold in the blueberries. Spoon the batter into the muffin tins. I filled mine about 3/4 full & they filled out nicely.

Bake for 18 minutes total. The first 9 minutes at 400 degrees & the remaining 9 at 375 degrees. I didn’t do this because my oven is half the size of the normal oven, so I have to bake things at a lower temperature!

Let cool for 5 minutes in the muffin tin before moving them to a cooling rack.  My batter made 2 dozen easily.
